Every month Il Fornaio explores the food and wine of a different region in Italy with a regional menu. For two weeks, a specially crafted, regional menu is available along with wines from the region. In June 2012, the regional menu is available through June 17, and Veneto is the region that is being explored this month.

Veneto, the region surrounding the free state of Venezia, or Venice, is surrounded by land as well as the sea, and both influences are evident in its cuisine.

Il Fornaio takes great pride in creating authentic regional menus. This month’s menu was created by Chef-Partner Mauro Mazzon in collaboration with Executive chef and brother Maurizio Mazzon. The brothers grew up in Marcon, Veneto and learned to cook from their mother.

On the regional appetizer menu is a butternut and kabocha squash soup, an heirloom tomato salad with spring onion, and cucumber, Tuscan melon wrapped in prosciutto, as well as grilled sea scallops.

The regional pasta menu features pasta, potato dumplings, and risotto. There are large pasta tubes filled with Swiss chard, escarole, and dandelion. The dish is baked in the oven with a béchamel sauce, porcini mushrooms, and pecorino cheese. The housemade gnocchi are served with lamb ragu and pecorino cheese. Finally, the risotto features seafood and includes Mediterranean seabass and shrimp.

Main course choices showcase seafood as well as meat. On the menu is a filet of sole, fresh wild prawns, a mixed grill of beef tenderloin, chicken, sausage, and pancetta, and a seafood mixed grill of salmon, sole, prawn, and sea scallops.

The regional dessert is fresh peaches marinated with Prosecco. The peaches are served with amaretto gelato, amaretto cookies, and mascarpone cream.
